Green Chile Queen Queso
1/2 lb Velveeta cheese or grated Longhorn/Jack combo
1/2 c. Green Chile Queen Chile Verde
1 - 2 fresh jalapeno diced (optional)
Combine ingredients until cheese is melted and mixture is creamy.  Spinkle with minced fresh cilantro (opt) and serve with tortilla chips
 
 
 
  
Green Chile Queen Breakfast Burrito
2 medium Russet potoatoes (diced)
1 small onion (chopped)
1 jalapeno (finely diced)
4-5 eggs (beaten and seasoned)
4 flour or corn tortillas
1/2 cheese (grated)
 
Saute potatoes and onions in butter or olive oil until tender, add jalapenos during last 5 minutes.  Set aside until eggs are nearly ready. 
 
Scramble eggs then add potato mixture.  Spoon mixture into a warm tortilla, add cheese and roll up.  Served "smothered green" and top with more cheese. 
 
 
 
Green Chile Queen Huevos Rancheros
1/2 c. can refried beans
1/2 c. grated cheese
2 eggs/person
Flour tortillas (1 per person)
Green Chile Queen Chile Verde
 
Warm refried beans in pan or microwave.  Cook eggs sunny-side up, poached, over-easy, depending upon personal prefernce.  Spread beans over warmed tortilla, place cooked eggs on top, smother with Green Chile Queen Chile Verde, and top with grated cheese.
 
 
 
Green Chile Queen Chile Rellenos
4-5 fresh Anaheim or Pablano Peppers
1 lb Fiesta mix cheese (grated)
3 eggs (beaten and seasoned)
1/4 milk
1/2 c. Massa flour
 
Slice open peppers, taking care to leave intact while removing seeds and deveining. Prepare oil for frying. Stuff peppers with grated cheese then dip in egg/milk mixture.  Dip stuffed peppers in flour and place in hot oil in shallow pan. Cook until cheese is melting and peppers become crispy.  Serve "smothered green" with a side of Mexican rice and refried beans.
