I spent many years attempting to replicate a recipe which was the best of the best; not just in my book! Pat G's chile boasted numerous articles and "Best Of" awards though she certainly never sought them. Their restaurant was a hole in the wall in a less than desirable section of downtown Denver where loyal connoisseurs patronized despite the area. No alcohol was served, no “feet on the booths”, beans were sorted by hand and the halves and stones were sent back for whole beans. My family and the many others we introduced to the delicacies, made the long trek as often as possible and could barely wait for the food to arrive at the table. For over 25 years I invariably ordered a bowl of green chile with homemade tortillas. She vowed the recipe would go to her grave with her and it did....God bless her! I feel I have come as close as possible to perfecting my recipe and believe it would make her proud.
